Lemon curd marble muffins

Was emailed earlier for my lemon curd muffin recipe and was reminded that I hadn't posted on my blog in quite a while. Apologies to my one and only follower!!!

So to remedy that here is the response recipe. Can't claim it as my own. Got it from River Cottage Everyday however as always I tweak. Instead of plain yogurt and milk i use buttermilk 200ml and 50ml milk. Makes em lovely and light. Also if you make these with homemade lemon curd, even better.

emon Curd marble muffins

225g plain flour
2 tsp baking powder
a good pinch of salt
100g caster sugar
125ml plain yoghurt or buttermilk
125ml whole milk
75g unsalted butter melted
150g lemon curd

Put 12 large paper cases into muffin tray.

Put all the dry ingredients into a bowl and whisk to aerate and combine.

In a jug mix all the wet (except lemon curd) ingredients together.

Combine wet and dry - do not over mix.

Then add the lemon curd in 6 or 7 dollops and quickly marble them together, just a couple of light stirs should do it.

Spoon mix into paper cases and bake in a preheated oven 180Âșc for 20-30 minutes (my oven is fan assisted so they take 22 minutes). Cool on a rack and eat whilst still warm. YUM
